NUMIDIAN CHICKEN
Ingredients:
- Chicken pieces (One for each person)
- Cumin powder (Quarter teaspoon)
- Coriander seeds (Quarter teaspoon)
- 4 dates (Chopped into small pieces
- Chopped nuts (4 tablespoons)
- Honey (2 tablespoons)
- Wine vinegar (2 tablespoons)
- Chicken stock (1 chicken stock cube crumbled in a cup of water)
- Pepper (A pinch)
- Cooking oil (1 tablespoon)
- Bread crumbs (1 slice of dry bread)
- Put the chicken pieces in a roasting dish.
- Brush them with cooking oil, sprinkle them with pepper and cover the dish with cooking foil.
- Roast the pieces at 350°F, 180°C or gas mark 4 for half an hour.
- While the chicken is roasting, put the other ingredients in into a pan and simmer for twenty minutes to make the numidian sauce.
- When the chicken pieces are ready, put them on a serving dish and pour over the sauce.
- Serve the chicken with vegetables.
